The news is all-abuzz about Starbucks running low on its seasonal Pumpkin Spice Latte. It has folks everywhere talking about the comfort the flavored drink brings. Perhaps a $4 drink takes a bite out of the sting of cold weather beginning, an election and a boring football season.
But for our family there’s another pumpkin flavored treat you have to stock up on early or you’ll be left out in the cold. Trader Joe's Pumpkin Pancake & Waffle Mix.
This week the wife got three boxes. One box is good for two Sundays of pancakes. Last year the store was bare of mix early in the season.
This morning I made our first batch and besides one burnt round in between the kids' first stack and the two stacks for mom and dad they were as tasty as we remember. The kids also loved them, which is good because we weren’t entirely sure the two picky pumpkins would like the change to the flavor of their morning staple.
Courtney and I first fell in love with pumpkin pancakes when she was pregnant with Carter. The neighborhood breakfast restaurant, Egg Harbor, had them on the seasonal menu and she would order them nearly every week during half the pregnancy. So every time we eat them or even talk about them we remember that time.
It's nice to have a go-to home version we can make without having to take the clan out to eat every weekend. But we also have to make sure to keep an eye on our stockpile to make sure we don’t run low before the season ends.
