Last night we watched Courtney's beloved Bears (Dave still remains loyal to the Dolphins, next year fellas!) lose to the Colts in Rex-tastic fashion while the temps dipped into the negatives. Good news is we certainly planned a fun menu.
Courtney started with Weight Watchers after Jan. 1 and I of course am joining her. During the week we're pretty militant about counting points and Saturday night before the concert we went to Gibson's so we had to kind of balance between enjoying the Super Bowl and pigging out. Besides a kind of fattening homemade guacamole we went the light route with spicy chicken wings. How can they be light? Well, I removed the skin that's how.
We also followed a WW recipe for the blue cheese dip. Instead of a light Blue Cheese dressing they suggest using fat free sour cream and adding crumbled blue cheese. It didn't work. Even, doubling the amount of the blue cheese didn't give the dip much flavor. The wings on the other hand were some of my best. I do a few different kinds. These could've been spicier (note for next time to add more cayenne) with chili powder, cumin, oregano, minced garlic, black pepper and of course paprika. I mix the rub to smell then coat the wings with the rub, mix it in a giant Ziploc shaking it a few times and let sit in the fridge for an hour or two.
I bake them at 350 for about 30 minutes and do a quick broil for 5 minutes each side to make them a bit crispy. Sliced some celery, carrots and red pepper for dipping. Very nice, and neither one of us missed the skin too much. Now if only we can get Rex to play a solid game start to finish…
